
The Fox and Hounds in Shenstone has appointed Claire Mordue as manager of its La Maison restaurant.
Claire, of Sutton Coldfield, was previously at The Woodman in Kirkburton, near Huddersfield, and before that spent several years working for the Toby Restaurants chain.
Her move to The Fox and Hounds came just three days after her wedding to long-time partner and former Simpsons chef Christopher Weatherstone, but Claire insists she couldn’t wait to start her new job.
She said:
“It’s my goal to ensure that everyone who eats at La Maison has a great dining experience. It’s all about quality food and quality service and I am here to ensure that both are of the highest standard at La Maison.”
Along with Claire’s appointment Michael Faulkner has been promoted to head chef.
Trained in French cuisine Michael has worked at some of the country’s top restaurants including the Carlton Hotel and Chelsea Hotel in London.
Michael describes his menu as British with a Euro twist and says he will be looking to use seasonal and local ingredients along with meat from the butcher’s shop just 100 yards from his La Maison kitchen.
